But the house doesn’t just produce Champagne under the Moët brand – it also owns and produces Dom Pérignon as well as Hennessy Cognac. During this process, the wine mixes with a sugar and yeast solution, also known as liqueur de triage, is bottled, capped with a soda bottle cap, and left to begin the secondary fermentation and aging. As the yeast consumes the sugars, carbon dioxide (i.e., bubbles) forms and stays in the bottle. The sparkler then ages for several months to several years.
